Spinach and Chorizo Omelette

Welcome to 2018! Welcome back to work! and welcome to new year resolutions.

If like me you overate at Christmas and now you’re feeling bad about yourself and wondering how you can fit back into your jeans again, and the quickest way possible to shed that Christmas chub.

Throughout the month of January, I will be sharing my favourite recipes with you to help you beat the chub and become excited about cooking meals at home.

First up is my

10-minute spinach and chorizo omelette

perfect for a quick dinner after a long day at work

 

Ingredients

2-3 free range eggs

2 tablespoons of cut chorizo

low-cal oil spray (follow product instructions)

1 spring onion

large handful of spinach

salt and pepper for seasoning

chilli flakes (optional)

 

Method

Heat the pan with the oil and meanwhile chop your chorizo if needed

Add the chorizo to the oil and cook for 3-4 mins

While the chorizo is cooking, scramble the eggs together in a bowl

Cut the spring onion and add this to the scrambled eggs

Season with salt and pepper and add the chilli flakes if wanted

Turn the temperature down on the hob and add the egg to the pan

While the egg is cooking, with a fish slice create holes in the omelette to allow the egg on the top to cook

Cook for 4-5 mins until all egg is cooked- leave it to be slightly runny

Add the handful of spinach and fold the omelette in half

Cook on both sides for another minute

Voila! One spinach and chorizo omelette ready to be served.
